Okay, here is a recipe for the vegetarians out there. I am NOT a vegetarian but sometimes you have to take a break from all the meats and reset your digestive system with something a little different.
If you hate mushrooms, then this recipe definitely isn’t for you. But if you love mushrooms then get ready for a delicious new recipe for you to try!
Now, this recipe is a lot simpler than it seems and take about 20 to 30 minutes to cook. Here are your ingredients…
- Fresh Garlic Cloves
- Balsalmic Vinaigrette
- Veggie Broth
- Dry White Wine
- Fresh Rosemary
- Fresh Parmesan Cheese
- Pappardelle Noodles
- Mushrooms (a lot of them) (I used baby bellas and one assorted mushroom pack)
- Butter
- Salt and Pepper
Now the first things you want to do is fill a pot with water for your noodles and start chopping up your garlic cloves into little pieces.
When your water comes to a boil, add the noodles and set a timer for about 8 minutes, depending on how stiff you like your noodles.
Next, add your mushrooms to a pan on the stove with a quarter stick of butter to sauté them until they are slightly golden. Try not to stir them too much because you want them a little brown.
Your next step once your mushrooms are a little golden, is to add the garlic you nicely chopped up and stir into your mushrooms for about a minute.
Your last few steps is to add all the other ingredients. First, I added some more butter to the mix and then I added the balsamic vinaigrette. Drizzle it all over and around the mushrooms about two times.
Next, add the dry white wine and do the same thing you just did with the balsamic and drizzle it into the mixture. All while you are adding these ingredients, you are continually stirring the pan.
Around this time, your noodles should be ready and you can drain them.
Now to add your last few ingredients. It is now time to add your veggie broth. Along with your veggie broth, take out two stocks of your fresh rosemary and take the little leaves off. Sprinkle the leaves into the mixture and stir.
Your mixture might be looking really liquidy right now so add your salt and pepper, I also added garlic salt for my own flavor, and turn down the heat to a simmer. If you notice that your sauce is still too liquidy, then add a little corn starch to the mix to make it thicker. Add a lid and stir occasionally. You can even add little dashes of extra wine if you like the taste as well.
When you start smelling the yummy aroma and your sauce has gotten a little thicker then it is time to eat!
Now here is the best part… add your sauce over your noodles, and grade some fresh parmesan over the top and wha-la!
