CLEAN EATING: Mycaela’s Zook Sausage

Want to try something a little different? Want to eat healthier? Well, here is an easy 20 minute recipe for ya!

ZOOK SAUSAGE!

INGREDIENTS:

  • 1 package of portabella mushrooms
  • 6 small cloves of fresh garlic
  • 1 zucchini
  • a small handful of mini fresh tomatoes
  • 4 Italian sausages
  • Balsamic vinaigrette
  • Garlic salt
  • Sea salt
  • Black pepper
  • 1 can of beer
  • Extra virgin olive oil
  • Parsley flakes

Start by cutting up the cloves of garlic really small and adding them to a pan with olive oil. Simmer in the pan with the oil for a minute or so.

While the garlic is simmering, chop up the zucchini and the tomatoes.

Once the garlic is ready, add the portabella mushrooms with some balsamic and simmer together for a minute or two.

Then add the chopped zucchini and tomatoes to the pan with the garlic, mushrooms and balsamic.

Add some more balsamic to the mixture and some more olive oil.

Stir everything together while adding the following seasonings.

Black pepper.

A dash of sea salt.

Garlic salt for extra flavoring.

And a little bit of parsley flakes!

While everything is simmering together, grab another pan to start cooking your sausage. I use olive oil and some beer to cook my sausage. Almost cook your sausage all the way but take it out before it is done.

Once your sausage is out, add it to the pan with all the other ingredients. There should be a little juice from everything in the middle of the pan. Move all the other ingredients out of the way and put the sausage right in the middle. This is so that it picks up a little of the flavor from the juices you have already fused together.

If your sausage still isn’t cooked all the way, cut all of them open in the middle to cook it faster and absorb more of the juices for flavoring. I even started to pile all the other ingredients on top of the sausage and flipped it over so that the cut part is facing directly into the juices. Add a dash more of beer, balsamic and whatever other seasonings you want for extra flavor.

Cook together for a few minutes and then… wah-la! All done and ready to eat!
